ISO 14001:2015 Environmental Management
ISO 14001 for hospitality: the certificate for hotels, restaurants and caterers
ISO 14001 shows corporate clients, event organisers and purchasing departments that you manage energy, water and waste in a structured way. With Zertify you answer 34 questions online and receive the certificate within 4 hours after passing and payment. No auditor visits your kitchen or your hotel.
01: Demand
Why hotels and restaurants are asked for ISO 14001
The request rarely comes from the guest at the front desk. It comes from the company that books forty rooms for a conference, from the event organiser who needs a caterer for three days, from the public body that puts catering out to tender. Their supplier questionnaires contain a section on environmental management, and a certificate is the shortest answer to it.
A purchasing department wants a document it can file. An ISO 14001 certificate with a number and a verification page does that. The buyer enters the number, sees the holder and the standard, and ticks the box. Without it, you fill in the same environmental questions by hand for every client.
There is also an internal reason. A hotel with a restaurant runs heating, cooling, laundry and kitchens around the clock. Energy, water and food waste are among your largest cost lines, and ISO 14001 makes you measure them. Many businesses find the first savings in the meter readings, before any investment.
02: Impacts
Where a hotel or restaurant affects the environment
The standard asks you to identify your environmental aspects: the activities that use resources or create waste and emissions. In hospitality they sit in a few recognisable places.
- Energy
- Heating, cooling and hot water for rooms, ovens and hobs in the kitchen, cold rooms that run day and night, ventilation in dining areas.
- Water
- Showers and baths, dishwashers, laundry for linen and towels, pool or spa, watering of outdoor areas.
- Food waste
- Plate leftovers, overproduction at the breakfast buffet, spoiled stock from the cold store, trimmings from preparation.
- Cleaning agents and chemicals
- Housekeeping products, descaler, dishwasher detergent, degreaser for extraction hoods, and how they are stored and dosed.
- Single-use items
- Minibar packaging, miniature toiletries, takeaway containers, disposable tableware at events.
- Deliveries and transport
- Supplier trips for food and beverages, linen collection, guest and staff shuttles.
Each aspect has an impact: electricity use leads to emissions, wastewater carries detergent, food waste adds to disposal volumes. You record both, then decide which ones matter most for your site.
03: Requirements
How a hospitality business meets the key requirements
The requirements of ISO 14001 are the same for a steel works and a guesthouse. What differs is the evidence. The table shows what that evidence looks like in a hotel, restaurant or catering business.
| Requirement | Example in a hotel, restaurant or caterer |
|---|---|
| Identify environmental aspects and impacts | A register per area (kitchen, housekeeping, laundry, technical room) listing consumption and waste streams. |
| Record compliance obligations | A list of the permits and legal duties that apply to your site, for example for wastewater, waste disposal and chemical storage, each with an owner and a review date. |
| Set an environmental policy | One page signed by the owner or general manager, with a commitment to improvement, for example on food waste and energy use. |
| Plan objectives and actions | Weigh breakfast leftovers for three months, then cut buffet overproduction by a set share. Replace corridor lighting by a fixed date. |
| Emergency preparedness | A written plan for a fryer oil spill, a refrigerant leak in the cold room and a spilled drum of cleaner, with a short drill each year. |
| Monitor and report performance | Monthly readings of electricity, gas and water, weights per waste stream, reviewed by management at a set meeting. |
04: Daily operation
What changes in a hotel or kitchen once the system runs
Take a hotel with a restaurant and a small event room. Planning (clause 6) produces the aspect register and two or three objectives. Operation (clause 8) turns them into instructions: how much cleaner housekeeping doses per room, how the kitchen separates used cooking oil, who closes the cold room door at night.
Support (clause 7) matters in a business with seasonal staff. New employees need a short briefing on waste sorting and dosing before their first shift, and you keep a record that it took place. Performance evaluation (clause 9) is the monthly look at meters and waste weights. If a figure drifts, you note the cause and the action.
The owner or general manager stays responsible for the system. The standard follows the Plan-Do-Check-Act cycle, and the check step belongs on the management agenda, next to occupancy and food cost.
05: With Zertify
Getting the ISO 14001 certificate with Zertify
Zertify issues certificates based on an online self-assessment. The certificate is issued by G6 Agency AG under licence from SICE, and SICE reviews every assessment before it is issued. There is no on-site audit.
The price is CHF 699 (€699) in the first year, then CHF 469 (€469) per year including the yearly online re-audit. The certificate is valid for 3 years. Billing is an automatic yearly subscription that you can cancel at any time in your customer account, effective at the end of the current year. If you cancel, the certificate ends with the paid year. Two standards earn a 20% discount, three or more 30%, also on the yearly fee. Swiss and Liechtenstein customers pay 8.1% VAT, which is included in the prices. You do not need an account to buy.
Answer 34 yes/no questions
The self-assessment is free and takes place online. Answer for your own site, whether that is one restaurant or a hotel group.
Pass the assessment
14 of the questions are mandatory requirements of the standard and all must be answered yes. Among the other 20, at least 14 must be yes.
Pay and receive the certificate
After passing and payment, the certificate arrives within 4 hours as a PDF.
Show it to clients
Every certificate can be verified publicly by number and by the QR code on the PDF. Put the verification link into your quote or questionnaire.
06: Routes
Self-assessment or on-site audit: which one does your client expect?
Most questionnaires ask for a valid ISO 14001 certificate and a way to check it. Some tenders go further and name the type of audit. Read the tender text before you decide, and if it is unclear, ask the contracting body what it accepts.
The classic route with an on-site audit by a certification body takes longer and costs more, and the audit takes place at your premises during operation. The guides compare both routes and the cost side by side.
